Kale Pesto Healthy Recipe – Gluten Free and Vegan

This is a healthy recipe in my fridge and can be used with pasta, baked sweet/white potato, salmon or as a dip. Believe me- it has the goodness and yumminess all in one.

How to create the best kale pesto

Kale Pesto Ingredients

  • 5 cups of washed organic Kale leaves
  • 5 cloves Garlic
  • 1 tsp whole black pepper
  • ¼ tsp cayenne pepper (optional, if you like the heat)
  • 1 lemon
  • 1.5 Tbsp nutritional yeast flakes
  • 5 macadamia nuts (you can also use cashews, almonds, pinenuts or brazil nuts)
  • 1 tsp pink/sea salt
  • 1 Tbsp Coconut Oil
  • 1 Tbsp extra virgin olive oil

Method

In a skillet or plan, gently warm the coconut oil. Once melted, add the garlic cloves. Give it about 30 seconds and add Kale. Cover the pan. Give it 5 minutes on low heat and then switch off the flame.
Transfer this and all other ingredients into a blender or nutri-bullet and blend. You can add couple of tbsps. of water or vegetable stock to loosen the mixture and help with blending.
